My go- to granola, these flavours balance perfectly. Enjoy as a snack on it's own, mixed with yogurt, nut milk, or as a crunchy topping on your favourite bowl of oatmeal!

Serves 6-8
INGREDIENTS
WET
1/2 cup maple syrup
1/4 cup coconut oil, melted
3 tablespoons balsamic vinegar
2 tablespoons vanilla
1 teaspoon almond extract
3/4 teaspoon salt
1 vanilla bean, scraped
DRY
1 cup raw buckwheat groats
1 cup rolled oats
1 cup almonds, roughly chopped
1/2 cup quinoa
1/4 cup pumpkin seeds
1/4 cup chia seed
1/4 cup flax seed
1 cup dried cherries
PROCEDURE
Preheat oven to 225 degrees F. In a medium bowl whisk together wet ingredients. In a separate bowl mix together all dry ingredients except cherries.
Using a rubber spatula stir the dry ingredients into the wet ingredients. Transfer onto a baking sheet lined with parchment paper. Bake for 1 hour-until golden brown, stirring every 15-20 minutes.
Remove from the oven. Toss in dried cherries and let cool. Store in airtight container once cooled. Enjoy!
