ROASTED GARLIC PEA PESTO

The perfect "go-to" to have fresh in your fridge - great with eggs on toast, fresh veggies, pasta, or pesto rice bowls.


INGREDIENTS


3-4 roasted garlic cloves

1 cup fresh basil leaves

​1 cup fresh parsley leaves

1/3 cup walnuts (can sub pine nuts instead)

1 cup peas

1 lemon juiced

1/4 cup olive oil

1 teaspoon miso paste

1 teaspoon sea salt

pepper to taste


PROCEDURE


Preheat oven to 375 degrees F. Keeping the cloves in tact, carefully slice off the top of the whole garlic head, exposing the top part of the cloves. Drizzle with olive oil and sprinkle with salt and pepper. Loosely wrap in tin foil to allow the garlic head to steam and roast at the same time. Roast for 40-45 minutes until garlic is tender, golden and smells like heaven! Remove from oven and let cool.


Combine cooled garlic and remaining ingredients in a food processor, process until smooth and combined. Adjust flavour with additional salt, pepper and lemon juice, enjoy!


*I use left over roasted garlic cloves for salad dressings or homemade hummus and dips!
