Fresh, colourful, packed with plant-based protein and takes less than 10 minutes to prepare!

Makes 4 servings
1 cup quinoa, cooked in vegetable broth
1 cucumber, chopped
2 peppers, chopped
1 cup baby tomatoes, halved
1 red onion, thinly sliced
1 can chickpea, rinsed and drained
1 cup gota feta cheese, crumbled
handful fresh dill
Dressing
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon dijon mustard
3-4 garlic cloves, minced
1/2 teaspoon oregano
salt and pepper to taste
Combine all ingredients in a large bowl, toss with dressing and enjoy!
