GEM LETTUCE BREAKFAST SALAD W/ FRESH HERBED DRESSING

The perfect brunch side or meal on its own, this is not your everyday salad!


INGREDIENTS


1 head of gem, butter or red leaf lettuce, washed and roughly chopped (I find the texture of these make for the best options)

1 cup quinoa, cooked and cooled

1 large shallot, thinly sliced (if you have a mandolin this works great)

1/2 cup slivered almonds, toasted

Goat feta, crumbled

2 hard boiled eggs (optional)


DRESSING

1/2 cup fresh oregano, loosely packed and finely chopped

1/2 cup fresh parsley, loosely packed and finely chopped

1/2 cup fresh basil, loosely packed and finely chopped

1/2 cup olive oil

1 lemon, juiced

1 teaspoon sea salt


PROCEDURE


Gently toss lettuce, quinoa, shallot, almonds and feta, top with hard boiled eggs and 1-2 spoonfuls of dressing- you don’t need much as it’s very flavourful! Enjoy!
