Dairy-free and packed with vitamin c, fibre and iron!

Makes 4-5 Servings
INGREDIENTS
2 tablespoons extra virgin olive oil
1 yellow onion, diced
4 cloves garlic, minced
3 celery stalks, chopped
2 heaping cups baby potatoes, quartered
1/4 teaspoon salt
1/4 teaspoon pepper
5 cups vegetable broth
1 tablespoon miso paste
1 cup cashews, soaked
4 heaping cups brocolli florets
1/3 cup nutritional yeast
1/2 lemon, juiced
PROCEDURE
In a large pot add olive oil, onion, garlic, celery, potatoes, salt and pepper - cook over low heat until fragrant (2-3 minutes).
Add vegetable broth and miso paste, increase heat to a simmer, simmer uncovered for 10-12 minutes until potatoes start to soften.
Add soaked cashews and broccoli florets, simmer for another 5 minutes until soft.
Remove from heat, add all ingredients + nutritional yeast and lemon juice to a highspeed blender, blend until smooth (may have to blend in 2 batches). Season with additional s + p and enjoy!
