Who said pasta has to be a cheat meal? Whip this dish up for a plant- based protein packed meal with all the fresh greens you need, and more!

Serves 2-3
INGREDIENTS
Roasted garlic, pea pesto
1 package red lentil fusilli (or plant- based pasta of choice)
1 cup sun-dried tomatoes, roughly chopped
2 handfuls fresh arugula
2 tablespoons nutriitonal yeast
Combine pesto ingredients in food processor, set aside. Cook pasta as directed on package, remove from heat and drain. Adding drained pasta back to the pot add tomatoes, arugula, nutritional yeast and desired amount of pesto. Optional garnish: fresh basil leaves, or lemon zest, enjoy!
